Ingredients
Dough
180g wheat flour
90g almond flour
2 tsp baking powder
150ml milk
2 eggs
50ml rapeseed oil (+ extra for the pan)
2 ripe bananas
Breadcrumbs (for the pan)
Filling
2 bananas
250g strawberries
Topping
200ml whipped cream
200ml Turkish yogurt
2 pinches vanilla powder
50ml lemon curd
For Garnishing
1 pot of mint
500ml strawberries
Zubereitung
Dough
Preheat the oven to 175°C.
Grease and flour a baking pan with a diameter of about 15 cm (for 12 pieces).
Mix wheat flour, almond flour, and baking powder in a bowl.
Stir milk, eggs, and oil together and mix into the flour mixture.
Mash the bananas and stir them into the dough. Pour the dough into the pan.
Bake in the middle of the oven for 20–25 minutes.
Check with a wooden skewer if the cake is done before removing it.
Let the cake cool completely.
Filling
Mash the bananas with the strawberries.
Whip the cream and mix it with yogurt, vanilla powder, and lemon curd.
Divide the cake base into 2 parts.
Place one part on a plate and spread the banana-strawberry mixture on it. Place the second part on top as a lid and spread the cream mixture over it.
For Garnishing
Garnish with mint and strawberries.
