Swedish cherry cake

Ingredients

Dough

  • 80 g low-fat curd

  • 150 g sugar

  • 2 packs of vanilla sugar

  • 2 eggs

  • 40 g oil

  • 3 tbsp milk

  • 1 pinch of salt

  • 220 g flour

  • 1 tsp baking powder

  • 200 g cherries (from the jar, drained)

  • 300 g sour cream

  • 1 tsp cornstarch

Zubereitung

Preparation

Drain the cherries.

Preheat the oven to 180 degrees

Line a 28 cm diameter baking pan with baking paper or grease it.


Dough

In a mixing bowl, mix the low-fat curd cheese, 70 g sugar, vanilla sugar and 1 egg.

Gradually add the oil and milk.

Mix the flour with the baking powder and salt and work into the quark mixture.

Knead the dough into a smooth dough and let it rest for about 10 minutes.

Roll out the dough on a floured board and place it in the cake tin, pulling up the edges.

Prick the base several times with a fork and pre-bake for approx. 15 minutes .

Spread the drained cherries on the bottom.

Prepare a glaze from sour cream, the remaining sugar, the remaining egg and the cornstarch and pour it over the cherries.


Increase the oven temperature to 200 degrees and bake the cake for another 20 minutes.

After baking, sprinkle with the remaining vanilla sugar.


Refine:

Dust the cooled cake with powdered sugar.

Optionally serve with cream or a scoop of vanilla ice cream
